Fry’s Fettuccini Al La Polony Carbonara

Serves 4
Half Fry’s Vegetarian Polony/Slicing Sausage
350 g Fettuccini Noodles
3 Tblsp Olive Oil
1 Onion, finely Chopped
6 Tblsp Dry White Wine
4 Egg Yolks
4 Tblsp Low Fat Plain Yoghurt
75 g Grated Parmesan Cheese
2 Tblsp Fresh Parsley, Chopped
  Salt and Pepper
Method  

Cook noodles in boiling, salted water for 8 –10 mins until al dente, drain thoroughly. Heat oil in a frying pan; add the onion and sauté gently for 5 mins until softened. Add Fry’s Vegetarian Polony/Slicing Sausage and fry for a further 4 mins over high heat. Add the wine and allow the sauce to reduce. In a small bowl, beat together the egg yolks, yoghurt, Parmesan, parsley, salt and pepper. Stir the Polony and yoghurt mixtures into the hot noodles. Serve immediately on heated plates.
