Fry’s Fish Curry

Serves 4
Ingredients
4 Fry’s Vegetarian Traditional Burgers
2-3 Tsp Curry Powder
1 Onions, Chopped
1 Clove Fresh Garlic, Chopped
To Taste Curry Leaves, Chopped
1 Punnet Mushrooms, Chopped
1 Can Tomato and Onion Puree
125 ml Lemon Juice
To Taste Salt
To Taste Sugar
To Taste Coriander
Braised Rice or Roti
Method

Fry 4 Fry’s Vegetarian Traditional Burgers and set aside and cut into pieces
Heat oil and add chopped onions, chopped fresh garlic and chopped curry leaves. Saute until lightly browned.
Add 2 – 3 teaspoons of curry powder and one punnet of chopped mushrooms. Allow to cook until dry and then add a can of tomato and onion puree. Allow to simmer for 5 mins. Add 1/2 cup of lemon juice or tamarind juice. Add salt and a little sugar to taste. Cook for another 10 mins or until gravy has thickened.
Add burgers and garnish with chopped coriander.
Serve with braised rice or Roti.
