Vegetarian Chili “Con” Carne

Ingredients
Fry’s Vegetarian Mince with Vegan Gravy
1 tin Red kidney beans
1 tin four bean mix
1 tin Mexican salsa/ tomato mix
1 tin chopped tomato or 2 large fresh tomatoes
2 cloves garlic
1 small onion or a few spring onions
1 chilli (de-seeded if you don’t want it too hot) or dried chilli flakes
Mixed herbs or herbs & garlic and parsley
Salt & pepper
Oil
Method

1) Pan fry (or wok) chopped/diced onion in a splash of oil and crushed garlic cloves.
2) Once golden, add the mince and cook until fully defrosted. Add a generous sprinkle of salt, pepper and herbs as you go.
3) Add gravy powder as directed (10g in 1 tablespoon water).
4) Add your beans and mix.
5) Then add all of the tomato (tins and/or diced fresh tomatoes).
6) Mix well on a steadily increasing heat.
7) Add a pinch more salt, pepper and herbs to taste.
8 ) Finally, add your finely chopped chilli or chilli flakes. If you like it spicy, 2 chillies and some of the seeds will do nicely!
9) Once happy with the seasoning place the whole lot in an oven-safe dish (you’ll need a bigish one) and cover with tin foil.
10) Pre-heat oven to 180°C
11) Cook at 180°C for 1hr 30mins, stirring only once or twice to ensure liquid doesn’t spill over. Can take out after 1hr and reheat for 30mins before serving.
12) Sprinkle with cheese at 5mins to go (if desired).

Suitable for Vegans
Serve with salsa& guacamole on tortillas, tacos, tortilla chips or even on toast
