Pomodoro Pasta

Pasta of your choice
1 box Fry’s Thick Cut Chunky Strips
1 garlic clove, crushed
1 onion, chopped
6 fresh tomatoes, skinned and chopped
115g tomato paste (small tin)
400g peeled tomatoes (large tin)
Salt and pepper to taste
Sugar to taste
80 ml red wine
1/4 cup fresh basil, chopped
Basil pesto
50g pinenuts, toasted

Sauté onion and garlic in a little oil until softened. Add fresh tomatoes, whole peeled tomatoes and tomato paste. Cook until combined, check seasoning and tartness. Add sugar to taste and red wine. Add fresh chopped basil. Fry Chunky Strips in a little oil for 6-8 minutes until browned and crispy. Add Chunky Strips to sauce.
Place pasta in serving bowl and top with sauce. Garnish with toasted pinenuts. Serve with small bowl of pesto
