Savoury Vegetarian Muffins

100g Fry’s Slicing Sausage/Polony
2 cups self-raising flour
80g butter, melted, cooled
1 egg, lightly beaten
1 cup milk
100g feta cheese, crumbled
1/3 cup semi-dried tomatoes, finely chopped
2 tbsp pitted calamata olives, chopped
12 small sprigs fresh rosemary
butter to serve

Preheat oven to 200°C. Lightly grease a muffin tray.

Sift flour into a large bowl. Make a well in centre. Pour butter, egg and milk into a jug. Stir to combine. Pour into well. Stir until almost combined. Fold through feta, polony, tomatoes and olives.

Spoon mixture into muffin holes. Insert a rosemary sprig in the top of each muffin. Bake for 20 minutes or until a skewer inserted in the centre comes out clean. Set aside in pan for 1 minute. Turn out onto a wire rack to cool completely. Place muffins in an airtight container. Serve with butter.
